Alcohol-Free Almond Pineapple Sour Slush

A tangy alcohol-free sour with pineapple juice, lemon, cherry syrup, and almond extract in a silky, icy texture for an easy party pour.

Make these preparations before you start the machine.

Syrup

You need 108 ml for this batch

Makes 120 ml — 12 ml left over

1Open a jar of cocktail cherries in syrup.
2Pour off and reserve at least 108 ml of the cherry syrup for the slush mixture.
3Keep the cherries aside for garnish if desired.

Straining

Strain out any cherry pieces or solids so the reserved syrup is smooth before adding it to the machine mix.

Combine the base
Add the pineapple juice, lemon juice, egg white, cocktail cherry syrup, and almond extract to a large pitcher or mixing container.

Mix thoroughly
Whisk or blend briefly until the egg white is fully incorporated and the mixture looks evenly combined.

Chill and churn
Pour the mixture into your slush machine and churn until thick, icy, and pourable.

Serve cold
Dispense into glasses and serve right away while the texture is at its best.

Chill the pineapple juice, lemon juice, and cherry syrup before mixing for a smoother texture from the machine.
Use pasteurized egg white if serving to children, pregnant guests, or anyone avoiding raw egg.
