Zero-proof from the library
Alcohol-free recipes from the Slushable library. Every one is balanced to the 12–16° Brix slush zone, so they freeze the same way the spiked batches do.
Zero alcohol is not zero sugar
Take the alcohol out and sugar becomes the only thing holding the batch between liquid and ice. Dissolved sugar is what lowers the freezing point, so a mix sweetened with stevia or built on a diet drink reads close to plain water in the machine and freezes into a block. That is why the frozen mocktail recipes here are balanced to the same 12–16° Brix as the spiked ones.
If you want to cut sugar anyway, use a bulk sweetener that dissolves like sugar rather than a high-intensity one — can you make a sugar-free slushie? covers what actually works and what just tastes sweet.
Make it bright, not sugary
- Stay under 15° Brix: kids notice syrupy drinks; 13° keeps it refreshing.
- Strain fruit: removes seeds that can clog the auger and create icy bits.
- Add a pinch of salt: boosts flavor without more sugar.
- Serve small: 4–6 oz cups keep portions fun and reduce melt time.
