Watery Slush Fix

Fix watery slush in minutes

Most soupy slush comes down to one of three things — too much sugar, too much alcohol, or a warm/under-filled machine. Here's the fast triage to get your mix back into the freezing zone.

Where your slush is now

Fix My Slush nudges this needle back into the green — run your batch.

What's your slush doing?

Pick the symptom that matches. We'll name the likely cause and the fastest fix — then walk you through it in Fix My Slush.

Check your Brix first

If the mix is above 15° Brix, it acts like antifreeze and won't set in a home machine. Diluting is almost always the fix.

  • Too high (soup): add water or unsweetened juice to lower the Brix.
  • Too low (ice block): if it freezes solid, then add sugar.
  • Target: 13–15° Brix for scoopable, spoon-standing texture.

Match alcohol with sugar

Spirits lower the freeze point. Each shot (1.5oz) needs roughly 12–15g of extra sugar to keep the auger from spinning soup.

  • Go easy on the booze: the more alcohol, the harder it freezes — keep it moderate.
  • Over-poured? Dilute with more non-alcoholic base.
  • Pre-chill the spirits so the freezer isn't fighting warm alcohol.
Side by side: a too-sweet watery slush that never sets, next to a perfect 13–15° Brix slush thick enough to stand a spoon in
Left: soup that never set (too sweet). Right: 13–15° Brix slush that holds a spoon.

Machine checklist

  • Freeze time: allow 35–60 minutes for a cold batch; longer if the mix went in warm.
  • Fill line: keep the hopper 80–90% full so the auger grabs the mix.
  • Ventilation: clear 6"+ around vents to avoid heat soak.
  • Gaskets & seals: if they leak, ice forms poorly — clean and reseat them.

Fast rescue recipe

For every 1L of soupy mix already in the hopper:

  • Add +250ml water (or unsweetened base).
  • Stir well to combine.
  • Wait 20 minutes — if it starts to thicken, you're on track.

Re-correct in small steps

Re-read and repeat rather than over-diluting. Two gentle passes beat one big one — and Fix My Slush does this math for you.

Watery slush FAQ

Why slush goes watery — answered

Nine times out of ten it is too much sugar. Above 15° Brix, sugar acts like antifreeze and stops the mix from setting in a home machine. The other common culprits are too much alcohol and a warm or under-filled machine. Check Brix first, then alcohol, then the machine.

No. Ice melts in the warm barrel, adds water, and lowers your Brix even further — which usually makes the texture worse, not better. Instead, dilute a too-sweet mix with water or unsweetened base to drop the Brix, or add sugar if the problem is that it froze into a solid block.

You almost never need to dump the batch. For every 1L of soupy mix in the hopper, stir in about 250ml of water or unsweetened base to pull the Brix down toward 13–15°, then give it 20 minutes to re-freeze. If it was the alcohol, dilute with more non-alcoholic base. Re-read and repeat in small steps rather than over-correcting.

Aim for 13–15° Brix. Below that the mix freezes too hard into an icy block; above it, the sugar keeps it soupy and it never sets. The 13–15° window gives you the scoopable, spoon-standing texture you want. A refractometer or the Slushable app makes this easy to dial in.

There is no fixed cutoff — it depends on your machine and how much sugar you add to balance it. Alcohol lowers the freezing point, so the more you pour in, the harder the batch is to set, and too much will stop a home machine freezing it at all. Offset each 1.5oz shot with about 12–15g of extra sugar, keep the booze moderate, and pre-chill the spirits so the machine is not fighting warm alcohol.

Measure everything before it goes in: target 13–15° Brix, keep the alcohol moderate and balanced with sugar, and pre-chill the mix 2–4 hours to shave 10–15 minutes off the freeze. Keep the hopper 80–90% full and the vents clear. Running the numbers in Fix My Slush before you start is the surest way to avoid soup.
