- Propeller Dark Rum310 ml
- Pernod Absinthe20 ml
- Simple Syrup 2:130 ml
- Lemon Juice70 ml
- Lime Juice30 ml
- Le Sirop de Monin Grenadine310 ml
- Water1110 ml
Method

Combine the liquids
Add the dark rum, absinthe, rich simple syrup, lemon juice, lime juice, grenadine, and water to a large pitcher or clean mixing container.

Mix thoroughly
Stir until the syrup and citrus are fully blended and the color is even throughout the batch.

Chill the base
Refrigerate the mixture until cold before pouring it into the machine for the best texture.

Freeze and serve
Add the chilled batch to the slush machine and run until thick, icy, and pourable, about 45 minutes. Serve cold.
Tips
- Chill the rum, juices, grenadine, and water before mixing so the batch freezes faster and pours more evenly.
- Stir or shake the batch well before adding it to the machine to fully combine the grenadine and citrus.
- Serve in chilled rocks glasses and garnish with a lime wedge if you want the classic Doctor Funk look.
- If holding the batch in the machine, give it time to return to an icy texture after refills or warm glassware.
