Method

   Measure the batch

   Add the white rum, cognac, triple sec, lemon juice, simple syrup, and water to a large pitcher or container.

   Mix until uniform

   Stir well until the syrup is fully incorporated and the mixture tastes evenly citrusy and balanced.

   Chill and churn

   Pour the mixture into the slush machine and run according to the manufacturer’s directions until it reaches a smooth, icy texture.

   Serve cold

   Dispense into chilled glasses and serve right away while the texture is at its best.

Tips

• Chill the spirits, lemon juice, syrup, and water before mixing so the machine reaches serving texture faster.
• Stir the batch thoroughly before adding it to the machine so the citrus, sugar, and spirits are evenly blended.
• Use chilled cocktail glasses or coupes to keep the drink icy from the first pour to the last sip.
• If the machine has been running for a while, give the bowl a gentle stir before serving to keep the texture consistent.
