Ingredients

Serves 8
  • Spiced Black Tea InfusionPrep first — see below800 ml
  • Milk (Whole)800 ml
  • Simple Syrup 2:1290 ml
  • Water20 ml

Prep first

Make these preparations before you start the machine.

Infusion

Spiced Black Tea Infusion

You need 795 ml for this batch

Makes 1000 ml — 205 ml left over

You'll need

  • cinnamon sticks4
  • cardamom pods16
  • cloves8
  • black peppercorns12
  • star anise2
  • fresh ginger, sliced20 g
  • black tea bags, such as Ceylon, Assam, or English breakfast6
  • freshly boiled water1000 ml

Steps

  1. 1Toast the cinnamon sticks, cardamom pods, cloves, peppercorns, and star anise in a dry frying pan until fragrant.
  2. 2Put the toasted spices, sliced ginger, and black tea bags into a teapot, cafetière, or heatproof jug.
  3. 3Pour over the freshly boiled water and leave to infuse for 10 minutes.
  4. 4Remove the tea bags, then strain the infusion into a clean container before using in the main recipe.

Cooling

Cool completely before adding to the slush mixture.

Straining

Strain out all spices, ginger, and tea bags; use only the liquid infusion.

Method

  1. 1

    Combine the base

Add the spiced black tea infusion, whole milk, 2:1 simple syrup, and water to a large pitcher or mixing container.

  2. 2

    Mix thoroughly

Stir until the syrup is fully incorporated and the chai mixture looks even and creamy.

  3. 3

    Chill and freeze

Pour the mixture into your machine and run until it reaches a thick, icy texture.

  4. 4

    Serve creamy

Dispense into glasses or cups and serve right away while the texture is cold and spoonable.

Tips

  • Chill the tea infusion and milk before adding them to the machine for a smoother texture and faster freezing.
  • Stir or shake the batch well before freezing so the milk and syrup are evenly blended.
  • If serving later, hold the mixture cold and remix briefly before adding it back to the machine.
  • A light dusting of cinnamon at serving echoes the chai spices without changing the batch.
