  • Water1500 ml

Prep first

Make these preparations before you start the machine.

Cordial

Chamomile Cordial

You need 61 ml for this batch

Makes 100 ml — 39 ml left over

You'll need

  • water100 ml
  • dried chamomile flowers4 g
  • white sugar70 g
  • fresh lemon juice10 ml

Steps

  1. 1Heat the water to just below a boil, then remove from the heat.
  2. 2Add the dried chamomile flowers, cover, and steep for 6 minutes.
  3. 3Measure 70 ml of the strained chamomile infusion into a small pan.
  4. 4Add the sugar and lemon juice and warm gently, stirring until fully dissolved; do not boil hard.
  5. 5If needed, add a little more strained infusion or simmer briefly to finish at 100 ml.

Cooling

Cool to room temperature, then refrigerate until cold before using in the main recipe.

Straining

Strain the steeped chamomile through a fine mesh strainer or coffee filter before measuring the infusion; discard the flowers.

Method

  1. 1

    Measure the liquids

Measure the Alexander Grappa Prosecco, lemon juice, chamomile honey mix, chamomile cordial, and water according to the finished recipe.

  2. 2

    Combine thoroughly

Add everything to a clean pitcher or machine hopper and stir until the honey mix and cordial are fully blended into the liquid.

  3. 3

    Freeze to texture

Run in the slush machine until the drink is icy, smooth, and pourable, about 45 minutes depending on your machine and starting temperature.

  4. 4

    Serve cold

Pour into chilled glasses and serve right away while the texture is at its thickest.

Tips

  • Chill the grappa, lemon juice, and chamomile mixers before combining so the machine reaches texture faster.
  • Stir or whisk the chamomile honey mix well before measuring, since honey-based syrups can settle.
  • For the cleanest flavor, use fresh lemon juice and strain out any pulp before adding it to the machine.
  • If holding for a party, keep the mixture cold in the machine and give it a quick stir before serving.
