Frozen Strawberry Daiquiri Slush

   Make a smooth strawberry base

   Blend the frozen strawberries with the water until completely smooth. Pass the mixture through a fine-mesh sieve so no fruit pieces enter the slush machine, then add enough water to bring the strained strawberry base back to 1.21 L.

   Mix the daiquiri

   Stir the Mount Gay Eclipse, lime juice, and 2:1 simple syrup into the strawberry base until fully combined. The finished batch should measure about 1.89 L.

   Chill the batch

   Refrigerate the liquid base until cold, then stir again before pouring. Do not add whole or frozen fruit pieces to the machine.

   Freeze and serve

   Pour the cold daiquiri base into the machine without exceeding its fill line. Run the frozen-cocktail program until thick and icy, about 45 minutes, then serve in chilled glasses.

Tips

• Keep the exact 1.89 L ratio together: it finishes at 14.61 Brix and 6.4% ABV.
• Start with a fridge-cold, fully liquid base to shorten the machine time and improve texture.
• Strain out fruit pieces before pouring; follow the solid-ingredient rule in the guide supplied with your machine.
• If scaling the recipe, use the calculator rather than changing only the rum, syrup, or water.
