  • Honey10 ml
  • Simple Syrup 2:1310 ml

Prep first

Make these preparations before you start the machine.

Infusion

Fresh Mint Tea Infusion

You need 1569 ml for this batch

Makes 1600 ml — 31 ml left over

You'll need

  • fresh mint45 g
  • boiling water1700 ml

Steps

  1. 1Lightly bruise the fresh mint leaves by clapping or pressing them, then place them in a large heatproof pot or cafetiere.
  2. 2Pour over the boiling water, cover, and infuse for 2-3 minutes, until the liquid is pale yellow-green.
  3. 3Strain the infusion into a clean heatproof container.

Cooling

Cool to room temperature, then chill completely before adding to the slush mixture.

Straining

Strain out and discard the mint leaves after the short infusion so the tea does not become grassy or bitter.

Method

  1. 1

    Combine the base

Add the fresh mint tea infusion, honey, and 2:1 simple syrup to a clean pitcher or machine bowl.

  2. 2

    Mix until smooth

Stir thoroughly until the honey is fully dissolved and the tea mixture looks even.

  3. 3

    Chill and churn

Pour into the slush machine and process for about 45 minutes, or until the texture is icy and pourable.

  4. 4

    Serve cold

Dispense into chilled glasses and garnish with fresh mint sprigs if you have them.

Tips

  • Chill the mint tea infusion before mixing so the drink reaches its best texture faster.
  • Stir the honey into a small splash of the tea first if needed, then combine it with the full batch for even sweetness.
  • Taste the mixture before chilling; the mint should come through clearly with a soft honey finish.
  • Serve soon after it reaches an icy, scoopable texture, or hold briefly in the machine and stir before pouring.
