Ingredients

Serves 8
  • Pineapple Juice1130 ml
  • Coconut Milk380 ml
  • Lime Juice190 ml
  • Spiced Brown Sugar Mock Rum SyrupPrep first — see below190 ml

Prep first

Make these preparations before you start the machine.

Syrup

Spiced Brown Sugar Mock Rum Syrup

You need 189 ml for this batch

Makes 225 ml — 36 ml left over

You'll need

  • dark brown muscovado sugar100 g
  • water200 ml
  • pineapple skin strips3
  • black peppercorns5
  • cloves5
  • cinnamon stick1

Steps

  1. 1Put the dark brown muscovado sugar and water in a saucepan and stir well.
  2. 2Heat gently, stirring, until the sugar has dissolved.
  3. 3Add the pineapple skin strips, black peppercorns, cloves, and cinnamon stick.
  4. 4Bring to the boil, then immediately turn off the heat.
  5. 5Refrigerate the finished syrup until needed before using it in the slush.

Cooling

Leave the syrup and aromatics to infuse until completely cold before straining; keep refrigerated and use within 3 days.

Straining

Strain through a fine sieve into a clean jug, discarding the pineapple skin and spices.

Method

  1. 1

    Chill the ingredients

Refrigerate the pineapple juice, coconut milk, lime juice, and spiced brown sugar mock rum syrup until cold.

  2. 2

    Mix the base

Combine the pineapple juice, coconut milk, lime juice, and syrup in a large pitcher. Whisk or stir until the coconut milk is fully blended.

  3. 3

    Pour and freeze

Add the mixture to your frozen drink machine and run until it reaches a thick, scoopable-pourable consistency.

  4. 4

    Serve cold

Dispense into glasses and serve right away while the pineapple-coconut texture is creamy and icy.

Tips

  • Chill the pineapple juice, coconut milk, lime juice, and syrup before mixing for the smoothest texture.
  • Shake or whisk the coconut milk before measuring so the mixture stays creamy and even.
  • Stir the base well before adding it to the machine, especially if it has been sitting in the fridge.
  • Serve as soon as the texture is thick and pourable for the best creamy piña colada finish.
