Ingredients

Serves 8
  • Cognac Gautier VSOP160 ml
  • Gin Guy Lafleur 10160 ml
  • Lime Juice80 ml
  • Angostura Aromatic Bitters10 ml
  • Fever-Tree Ginger Beer1330 ml
  • Simple Syrup 2:1150 ml

Method

  1. 1

    Combine the spirits

Add the cognac and gin to a large pitcher or mixing container.

  2. 2

    Add citrus and seasoning

Stir in the lime juice, Angostura bitters, and simple syrup until the syrup is fully incorporated.

  3. 3

    Pour in ginger beer

Slowly add the ginger beer and stir gently to combine without creating too much foam.

  4. 4

    Freeze and serve

Transfer the mixture to your slush machine and freeze until icy and pourable, then serve in chilled glasses.

Tips

  • Chill the cognac, gin, lime juice, ginger beer, and syrup before mixing so the batch cools faster and tastes sharper.
  • Pour the ginger beer slowly to keep foam under control before adding the mixture to the machine.
  • Serve in chilled glasses to help the icy texture hold longer.
  • A lime wheel or a small piece of candied ginger makes a fitting garnish if you want a simple finish.
