Ingredients

Serves 8
  • Lemon Juice470 ml
  • Assam Vanilla Tea InfusionPrep first — see below930 ml
  • Simple Syrup 2:1160 ml
  • Egg White280 ml
  • Water50 ml

Prep first

Make these preparations before you start the machine.

Infusion

Assam Vanilla Tea Infusion

You need 933 ml for this batch

Makes 1000 ml — 67 ml left over

You'll need

  • Assam tea leaves13.3 g
  • boiled water1000 ml
  • vanilla extract8.3 ml

Steps

  1. 1Put the Assam tea leaves in a heatproof teapot or jug.
  2. 2Pour over the freshly boiled water from the kettle.
  3. 3Immediately strain into a second heatproof jug, discarding the tea leaves.
  4. 4Stir in the vanilla extract.

Cooling

Leave the strained infusion to cool completely before using it in the main recipe.

Straining

Strain immediately through a fine mesh sieve so the tea does not become too strong.

Method

  1. 1

    Chill the tea

Make sure the Assam vanilla tea infusion is fully cooled before you start mixing the batch.

  2. 2

    Combine the base

Add the lemon juice, cooled tea infusion, simple syrup, egg white, and water to a clean pitcher or mixing container.

  3. 3

    Mix until smooth

Whisk or blend briefly until the egg white is evenly incorporated and the mixture looks uniform.

  4. 4

    Churn and serve

Pour the mixture into your slush machine and churn until thick and icy, then dispense into chilled glasses.

Tips

  • Use well-chilled tea infusion before mixing so the batch chills down faster and keeps a smoother texture.
  • Pasteurized egg white is the best choice for easy serving, especially when making a larger batch.
  • Whisk the egg white into the lemon, tea, and syrup until fully combined before adding the mixture to the machine.
  • Serve in chilled glasses to help the drink hold its icy texture longer.
  • A lemon slice or cocktail cherry works well as an optional garnish if you want the classic sour look.
