Three Dots and a Dash Slush

A tiki-style rum drink with orange juice, lime, honey, falernum, and allspice dram in a smooth, icy texture for a festive home bar night.

Make these preparations before you start the machine.

Syrup

You need 71 ml for this batch

Makes 90 ml — 19 ml left over

1Add the honey to a small heatproof container.
2Add the hot water and stir until the honey is fully dissolved and the syrup is uniform.
3Transfer to a clean bottle or covered container.

Cooling

Let cool completely before using in the slush mixture.

Combine the juices and sweetener
Add the orange juice, lime juice, and rich honey syrup to a large pitcher or mixing container. Stir until the honey syrup is fully blended.

Add the spirits and spices
Pour in the rhum agricole, aged rum, falernum liqueur, allspice dram, and Angostura bitters. Stir well to combine.

Chill the batch
Refrigerate the mixture until cold before adding it to your slush machine or freezer-safe setup.

Freeze and serve
Process until smooth and icy, then pour into chilled glasses and serve right away.

Chill the rum, orange juice, lime juice, syrups, and liqueurs before mixing to help the batch reach its ideal texture faster.
Stir the honey syrup thoroughly into the citrus and orange juice before adding the spirits so the sweetness is evenly distributed.
Serve in chilled tiki mugs or rocks glasses to keep the drink icy at the table.
