Ingredients

Serves 8
  • Brewed Green Tea1200 ml
  • Mango Juice300 ml
  • Simple Syrup 2:1230 ml
  • Lime Juice50 ml
  • Fresh Mint InfusionPrep first — see below50 ml
  • Water80 ml

Prep first

Make these preparations before you start the machine.

Infusion

Fresh Mint Infusion

You need 45 ml for this batch

Makes 60 ml — 15 ml left over

You'll need

  • small bunch fresh mint1
  • water75 ml

Steps

  1. 1Rinse the mint and lightly bruise the leaves and stems.
  2. 2Bring the water just to a boil, pour it over the mint, and steep for 5 minutes.
  3. 3Remove the mint and measure out at least 45 ml infusion for the main recipe.

Cooling

Cool completely before adding to the chilled tea base or frozen-drink machine mix.

Straining

Strain through a fine sieve, pressing the mint lightly to recover the liquid without forcing through leaf fragments.

Method

  1. 1

    Combine the tea base

Add the brewed green tea, mango juice, simple syrup, lime juice, fresh mint infusion, and water to a large pitcher or container.

  2. 2

    Mix until even

Stir thoroughly so the syrup is fully dissolved into the tea and the mango and lime are evenly distributed.

  3. 3

    Chill the mixture

Refrigerate the batch until cold before pouring it into your frozen drink machine.

  4. 4

    Freeze and serve

Run according to your machine’s instructions until the drink is icy and pourable, then serve right away in chilled glasses.

Tips

  • Chill the brewed green tea before adding it to the machine so the mixture freezes faster and tastes cleaner.
  • Stir the mixture well before pouring, especially if it has been sitting, to keep the mango juice and syrup evenly blended.
  • Serve in chilled glasses to help the texture stay icy longer.
  • For a fresher aroma, add a small mint sprig as a garnish if you already have extra mint on hand.
